Considered in rich countries as a "minor cereal", white fonio is a grass of the family cultivated for its seeds poaceae in parts of Africa.
The quantities produced are modest, but nevertheless this plant has many qualities. It is used in food preparation and enters many African traditional recipes like couscous, porridge, dumplings, donuts and even bread.
Its nutritional value is compared with that of rice. It has the great advantage to simply poor soils to grow.
